Cinnamon Sautéed Apples

Earlier this week, we got an enormous bushel of braeburn apples. Immediately, I thought of things like apple pie, apple crisp, and apple muffins. Days before receiving the apples, I made a declaration to avoid sugar, in all its form, for the  weeks leading up to Thanksgiving. My initial reason was for a "holiday prep" of sorts, to get myself unaccustomed to sweets so I dont overload on pumpkin pie. An added motivator is that since being pregnant, some of my Candida symptoms (yeast overgrowth in th gut) have resurfaced after being dealt with years prior. So, on a sugar-free mission, I set off to use up an entire bushel of apples before they went bad. 


I started off with applesauce in the crockpot (a little salt and a little lemon peel are my secret ingredients), and apple chips in the oven. A quick google search and some great advice from my Facebook friends and followers got the ideas going! Cinnamon Sauteed Apples on the stovetop fit nicely with my plan (seeing as the oven and crockpot were already spoken for). Needless to say, at this point, my house smelled UNBELIEVABLE. 

Chocolate Coconut Smoothie

Most days, I have a smoothie for breakfast. Granted, there are days when I want something warm like oatmeal, but that is more about nostalgia than nutrition. I do best when my day starts with protein and healthy fats, but it took me a while to understand that. Lately, I've been making this Chocolate Coconut Smoothie. The first time I made it was by accident, but I've been tweaking it and loving it ever since!

Turkey Pot Pie

Some people think that eating health means giving up all their favorite comfort foods. When I first started eating a healthier diet and eliminated the foods that created or exacerbated my health problems, I had this thought to. But once I got into it and started experimenting with different foods, I quickly realized that it is entirely possible to eat a diet of healthy foods without sacrificing any of my favorite and nostalgic comfort foods.

When the weather starts to turn colder, I start thinking about warming foods like soups, stews, and casseroles. When I started out cooking in college, I need to an EXACT recipe and would follow it without any variation. These days, I hardly follow any recipes. The results are either amazing or horrific. My husband and I give letter grades to these made up meals and the ones that are a unanimous get shared here. This Turkey Pot Pie was sort of a "keep my fingers crossed and hope for the best" kind of meal, but after just one bite we both agreed that this recipe was a keeper!

Sweet Potato Pudding

When Fall comes, with its chilly air and colorful leaves, my mind starts going to all things cinnamon (and pumpkin, and apples, and butternut squash, and...). The wood was stocked, the woodstove was lit, there was a steady rain outside, and only one thing left to do..... bake.

Eating healthy does not mean giving up sweets and comfort foods forever! However, when you do indulge in dessert, try to avoid processed sugars and instead choose healthier alternatives like raw honey, maple syrup, stevia, or coconut sugar. In this case, I went with local maple syrup because the combination of vanilla, cinnamon, nutmeg, and maple syrup is everything I think of when I think of Fall desserts.

Creamy White Bean Turkey Chili

Every Monday, I work a 12 hour day. I get home a little before 8:00 and by then I'm absolutely starving! Knowing that its much too easy to get take out on these busy days, I committed to using my crock-pot every Monday. I've had my crock-pot for a few years and prior to this promise to myself I could have counted on less than one hand how many times I've used it. I started looking up slow cooker recipes and quickly found that most of them called for ingredients like cream of something soup in a can, or overly processed refined flours. Crock-pot recipes dont seem to be synonymous with healthy, but there are a couple shining stars out there! 

By my third week of Monday night crock-pot meals, I remembered two frozen turkey breasts in my freezer. The weather was rainy and cold and the beginning of Fall was finally setting in. I got the idea of a Creamy Turkey White Bean Chili, but none of the recipes I found seemed to be exactly what I wanted. I ended up combining a few of them, along with my own twist. The result was good enough to eat two days in a row (and my husband isn't normally a fan of leftovers). 

There is a lot of ingredients, but most of them are things you likely already have in your kitchen.

Whether the kids need help with homework, or you end up working late, or the laundry is overflowing from the laundry room.... putting together a healthy meal during the weekdays can seem like an insurmountable task. This recipe comes together faster than a box of mac and cheese! I’m providing measurements, just to give you an estimate, but like all quick and easy recipes should be, this one is (nearly) impossible to screw up. Feel free to improvise with whatever veggies you have available. 

Sweet Potato and Veggie Bacon Bowl

(serves 2-3)
