Lemon-Tahini Kale Salad

I've made this kale salad so many times, and not until recently (when I decided to share it with all of you) did I ever measure the ingredients for the dressing. I'm sure it turns out a little different, but my point is this...

You CAN NOT screw this up.

As long as the ingredients are in there, an ANY amount, this salad will be amazing!

Kale is one of THE MOST nutritious foods available. Per calorie, it has more iron than beef and more calcium than milk. All dark leafy greens are packed full of important nutrients, but unfortunately they are also the main vegetable missing in most diets. Kale and other dark leafy greens help with:

Blood purification

Cancer prevention

Improved circulation

Strengthened immune system

Promotion of healthy intestional flora (yay!)

Promotion of subtle, light, and flexible energy

Lifted spirit and elimination of depression

Improved liver function

Elimination of mucus (cleared congestion, improved nasals)

Lemon-Tahini Kale Salad

1 bunch kale

1/4 cup raisins

1/4 slivered almonds

1/4 hemp seeds (optional)


1/4 cup olive oil

1 tablespoon tahini

1 tablespoon lemon juice

1 tablespoon apple cider vinegar

1 tablespoon water

1 teaspoon maple syrup

salt and pepper


Directions:

Using your hands (easiest method), remove stem and tear kale leaves into bite size pieces. 

Whisk together olive oil, tahini, lemon juice, vinegar, water, maple syrup and salt/pepper. 

Using your hands, massage dressing into kale. Take several minutes to do this, as this will help tenderize the kale. 

Mix in raisins, almonds, and hemp seeds. 


**In my opinion, I think this salad is even better the next day! The more the dressing soaks into the kale, the more tender the kale leaves get. So good!
